Response create(Booking booking, @Context UriInfo uriInfo);
It should be:
@POST
@Consumes(MediaType.APPLICATION_JSON)
@Produces(MediaType.TEXT_PLAIN)
Response create(Booking booking, @Context UriInfo uriInfo);
as the actual reponse is a plain text string.
